Your bamboo looks like it could be potted up now. Something that is popular in Canada is braided bamboo. We haven't tried it and I don't know if you'd like it but it would be a good challenge for you. Google it and see if it interests you.
Have you tried growing something that interests you from seed? We've done this many times and it gives you a new appreciation for the plant. If it thrives you will feel a sense of accomplishment!
Would it stay indoors or would you put it on your balcony? You should be able to order seeds on-line, correct? Do you like flowering plants or only greenery?
My lucky bamboo cuttings have produced roots in water. Does this make me a professional Gardner? Rather Bio Tech expert? 😜Please say yes.

@gjones I am looking for seeds that I can grow indoors. Didn't find any so far. Any suggestions? It's just for experience so anything would work.

Do you like orchids? We're trying to grow orchids from seeds for the first time. Only planted them last week.
It will stay indoors only. Yes I can order online. I would love flowering but for the start can settle with greenery assuming it would be simpler.
How about trying dwarf orange, lemon or lime trees?
