@belindah I fill any size jar with as much rind as possible, and then fill with vinegar up to the top. I write on it what date it will be done, in two weeks from now, and shake it whenever I remember. If I haven't got enough rind to fill a jar, I keep it in the fridge and just keep topping it up each day I eat any citrus fruit. 🫶
